Greek Cole Slaw

Ingredients

  • 2 tablespoons nonfat sour cream alternative
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup shredded cabbage
  • 1/4 cup coarsely shredded carrot
  • 1 tablespoon chopped cucumber
  • 1 tablespoon crumbled feta cheese
  • 1 1/2 teaspoons chopped green onions
  • 1 1/2 teaspoons chopped salad olives
  • 1 1/2 teaspoons sliced almonds, toasted

Preparation

Combine first 6 ingredients in a small bowl, stirring with a wire whisk until blended.

Combine cabbage and remaining ingredients in a medium bowl. Spoon vinegar mixture over vegetables; toss gently to blend.
