Veggie Shepard's Pie
1-1/2lb of Potatoes
6 tablespoons butter or margarine
1/2 tablespoon milk
1 large onion, chopped
6 veggie burgers, crumbled
2 tablespoons soy sauce
3/4 cup veggie stock or water
salt and pepper to taste
optional 2 carrots sliced
Preheat the oven to 400
Boil the potatoes and mash with 4 Tbs. of the butter and milk - put them to the side.
Melt the remaining butter in a frying pan and saute the onion and carrots.
Add in the burgers, soy sauce, and veggie stock
Simmer for 10-15 minutes, until you have a thickened mixture.
Pour into baking dish, and cover with mashed potatoes and bake for about 30 minutes, until potatoes are nice and brown.
