Sri Lanka Avocado Dessert

Ingredients: Serves 4-6

3 large avocados, fully ripe
1 cup cream
Caster sugar to taste
Dash of rum

Method:

Remove the seeds of the avocados. Cut into half lengthways. Reserve the avocado seeds. Scoop the pulp from the shells and mash smoothly with a fork. Stir in the cream and add some sugar to taste. Put into a serving bowl and place back the avocado seeds with the pulp. Cover closely with a plastic warp and chill before serving.

Note: The avocado seeds are placed with the pulp to keep the avocado from be discolored.
