Buffalo Wings (Reduced Fat)
Ingredients:
12 Chicken Wingettes (1st and 2nd sections separated)
12oz Franks Red Hot Sauce (not Buffalo Wings sauce)
4 Cloves Garlic (minced)
1/2 stick butter
How to make 'em:
STEAM (Do NOT Boil) the wingettes for 25 minutes. Place about 1 to 2 inches of water in a large pot and place a strainer or colander containing the wingettes in the pot raised above the level of the water (you can use a small bowl). Cover, bring the water to a boil, lower heat to a low boil and allow to steam for 25 minutes.
While the wingettes are steaming, prepare the buffalo sauce as follows:
Lightly saute the garlic in the butter for about 2 minutes. Add the Frank's Red Hot sauce and heat until "just" boiling. Reduce heat and allow to simmer until the wingettes are done steaming.
Remove the wingettes from the pot and place in a large bowl. Pour the Buffalo sauce over the wings and toss until completely coated.
Serve on a dish lined with iceberg lettuce. Add celery, blue cheese dressing as desired, or just enjoy them as is!
