Bran Muffins, Fat Free, Sugar Free

Recipe: Bran Muffins

  • 2 cups FIBER ONE (sugar free) or ALL BRAN BRAN BUDS
  • 1 1/4 cups Whole Wheat Flour (approx)
  • 2 cups Fat Free milk
  • 4 tsp Sweet-n-Low
  • 8 oz Fat Free Yogurt (flavor of your choice)
  • 1 Egg
  • 1 Tbsp Baking Powder
  • 2 Tbsp Cinnamon
  • ??? Raisins
  • ??? Mini Chocolate Chips
Mix Cereal, Milk, Egg, Yogurt, Sweet-n-Low, Raisins in a large mixing bowl and let rest for 5-10 minutes (until cereal becomes soggy and soft).

Mix flour, baking powder and cinnamon, mix into cereal mixture. Mixture should be "almost" "runny".

Add Chocolate Chips if your heart desires and you don't want to be a "purist".

Pour mixture into a greased muffin tin (I use PAM).

Bake approx 18 minutes or until lightly golden at 400 degrees F.

Approx 110 calories per muffin. Less than 1 gram of fat per muffin
