Yogurt Bran Muffins, Sugar Free

Recipe: Bran Muffins

  • 1 cup FIBER ONE (sugar free) or ALL BRAN BRAN BUDS
  • 2 egg whites or 1 egg, slightly beaten
  • 1/4 cup vegetable oil
  • 2 containers fat free yogurt (any flavor)
  • 1-1/2 cups whole wheat flour
  • 1/3 cup packed brown sugar
  • 1-1/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • ??? Raisins, blueberries or raspberries
  • ??? Mini Chocolate Chips
Crush and mix Cereal, Milk, Egg, Yogurt, Sweet-n-Low, Raisins in a large mixing bowl and let rest for 5-10 minutes (until cereal becomes soggy and soft).

Mix flour, baking powder and cinnamon, mix into cereal mixture. Mixture should be "almost" "runny".

Add Chocolate Chips if your heart desires and you don't want to be a "purist".

Pour mixture into a greased muffin tin (I use PAM).

Bake approx 18-20 minutes or until lightly golden at 400 degrees F.

Approx 130 calories per muffin. Less than 5 grams of fat per muffin
